A Blast from the Past!
This is a true story! This wine, viagra like all Providence wines, find was made under contract. However, when we received the wine I was concerned about the dominance of the oak. Yes, we entered it in the Tasmanian Wine Show where it was awarded a bronze but I decided to put it away for a few years for the oak to soften. Well, I forgot about it until about two months ago. Tried it and put it on tasting to very good effect. Still Chardonnay, still very evident oak and the wine has now gone fully through malolactic fermentation. Light yellow in colour and much better balanced than 14 years ago and full flavoured. Worth a try at $25/bottle! But this is not a keeping wine.
